Try This Herb Crusted Salmon To Boost Your Heart Health

February is American Heart Month, marking it as an important time to bring awareness to the fact that cardiovascular disease is the top killer of women and men in the United States. Fortunately, this disease is largely preventable with lifestyle changes. One such change that is crucial to make is in your diet, so choosing heart healthy recipes can go a long way towards protecting your heart. To keep your ticker going strong, try this salmon recipe.

For The Salmon

  • 1/2 cup of dry breadcrumbs
  • 1 1/2 teaspoons of lemon zest
  • 1/2 teaspoon of black pepper
  • 2 minced garlic cloves
  • 2 teaspoons of chopped fresh oregano
  • 2 teaspoons of chopped fresh rosemary
  • 2 teaspoons of chopped fresh flat-leaf parsley
  • 4 6 oz. skinned salmon fillets
  • 1/4 teaspoon of kosher salt

For The Salad

  • 1 teaspoon of Dijon mustard
  • 1 tablespoon of extra virgin olive oil
  • 1 tablespoon of fresh lemon juice
  • 1/4 teaspoon of kosher salt
  • 1/4 teaspoon of black pepper
  • 4 cups of mixed salad greens

Combine the breadcrumbs, lemon zest, pepper, garlic, oregano, rosemary, and parsley in a shallow dish. Coat both sides of the salmon with cooking spray and sprinkle with salt. Dredge the salmon on both sides in the breadcrumb coating.

Coat a nonstick pan with cooking spray and heat it over medium-high. Cook the fillets until done (about three minutes each side).

Create the dressing by mixing the mustard, olive oil, lemon juice, salt and pepper together. Toss with the greens and plate the salads. Top with one fillet of salmon and enjoy!
